Summer Cake Flavors I'm Obsessed With Right Now

Summer is my favorite season for cakes — the flavors are just better. Here are the combinations I've been making the most and why they work so well for warm-weather celebrations.

Summer is my favorite season for cakes. I know that sounds weird, but hear me out — the flavors are just better. Brighter, fresher, more alive. And the events are more fun. Backyard birthdays, outdoor weddings, quinceañeras with the doors open and music spilling out. I love it.

Here are the flavors I've been making the most this summer and why I think they work so well.

1. Mango and Passion Fruit Cream

This one is tropical and bright and it makes people stop mid-conversation when they taste it. Light vanilla sponge, fresh mango curd filling, passion fruit buttercream. It's a little unexpected and completely delicious. I've been pairing it with a white fondant exterior and mango-colored sugar flowers.

2. Lemon Lavender with Honey Buttercream

This is the one for the garden party crowd. The lavender is subtle — you taste it more as a feeling than a flavor, if that makes sense. The lemon keeps it bright and the honey buttercream ties everything together. It smells incredible when you cut into it.

3. Strawberry Shortcake

Classic. Never wrong. Fresh strawberry compote between vanilla layers, whipped cream frosting, fresh berries on top. It's nostalgic and light and everyone loves it. I've been doing a version with a little lemon zest in the sponge that takes it up a notch.

4. Dulce de Leche with Vanilla Sponge

This is my signature. My most requested flavor year-round, but especially in summer when people are celebrating big things. The caramel richness of the dulce de leche against the light vanilla sponge is just — it's perfect. It's the flavor that makes people ask "what IS this?" in the best possible way.

5. Coconut Cream with Pineapple Curd

For the beach-themed parties and the tropical vibes. Coconut-infused layers, bright pineapple curd filling, toasted coconut flakes on the outside. It's fun and it photographs beautifully.

6. Champagne Strawberry

A little champagne in the batter, fresh strawberry filling. This one is for the summer weddings — it feels celebratory in a way that's hard to explain. Elegant but not stuffy.
